Yellow Rice.

Indian Yellow Rice with vegetables, raisins and nuts. A great week-night dinner (with left over rice) or as a side dish with naan bread, fish or meat. You can put in any veggies you can find in your fridge, add some nuts and raisins and typical Indian spices like turmeric and cumin and away we are...

Preparation. 10 min.
Cooking. 20-25 min. 
Serves 4 as side dish / Serves 2 as main dish 


You need.

1  garlic glove

1 onion 

2 tsp cumin, ground  

2 tsp turmeric powder 

2 cups peas 

2-3  carrot

1 bell pepper 

1 handful raisins 

1 handful walnuts* 

2 cups uncooked white rice

salt and pepper



Instructions.

Cook the rice, as you usually do or use rice from the day before. 

In the meantime heat up oil in a frying pan / wok, fry the finely chopped onions and garlic and add the spices (turmeric and freshly ground cumin) to fry as well (approx. 1 min).

Now chop the carrots and pepper as small as possible and add it to the pan, fry approx. 10 min. or until soft. 

The raisins and nuts can be added now - fry for another 5 min.  

Finally mix in the rice and peas and fry everything until the rice has got this nice yellow colour. 

Season with salt and pepper. 


Note.

* Usually you get cashew nuts with your indian rice but personally I like walnuts better. Just go with what you like better :)


Serve yellow rice with naan bread or as a side dish with curry, meat, fish...
