Dal / Lentil curry.
Very easy to prepare and a well nourishing meal: Nepalese lentil curry with rice (Dal Bhat).
The daily and often only meal for many nepalese people and during our trekking in the himalayas a very welcome and satisfying revival food after a loooooong day!

Serves 4-5
You need.
Olive oil
1 small onion
2 garlic cloves
210g red lentils, dry
7.5 dl water
1 can peeled tomatoes (400g)
1 tsp salt
1 tsp coriander, ground
1 tsp cayenne pepper
1/2 tsp turmeric
1/2 tsp cumin, ground
1/4 tsp chili powder
2 cups rice, uncooked
1 lime and 4 small red chilis (optional)*
Instructions.
Cook the rice, as you usually do. I always use my rice cooker - so easy and you don't have to think about your rice till it's done.
Chop the onion and garlic and add them to the saucepan with some oil.
Once the onion and garlic have softened, add the lentils and roast them for 1-2 min.
Now put in 3 cups or 7.5 dl of water. Cover with a lid and let it simmer.
After about 15 min, when the water has absorbed, add all the spices (salt, coriander, cumin, cayenne pepper, turmeric, chili powder) and stir.
Add the tomatoes and more water if necessary.
Break the tomatoes into smaller pieces while you stir. Let the curry cook for another 15 min. until the lentils are fully cooked.
Note.
* For decoration you can cut a lime into 4 slices and put a red chili on top of the lentil curry.

For a fresh flavour you can squeeze the lime over your curry individually.
Careful with the chili. If you like it spicy you can eat the chili whole. Or you can remove the seeds beforehand and cut it into thin stripes and spread it over the curry.
Tip.
Pay attention when you buy the canned tomatos. Check the ingredients to know that they include only tomatoes and tomato juice - we don't want all the other stuff :) !
