basil & walnut Pesto.

Fresh pesto for pasta or sandwich spread!  Made in no time - promised! While the pasta is cooking, you pick the fresh basil and put it into the mixer with all the other ingredients -  that's it! 
I just remember this one time we were sitting in a guest house in Nepal and just ordered apple pancake for breakfast. We could see from the dining room how the owner went outside to pick fresh apples from the tree in the garden and that was the best pancake ever :)

Now, since my first little "herb garden" is ready, it's even more fun to relish the ultra fresh pesto! Do you like to watch your herbs grow too ? I think it's sooo exciting :)

Preparation. 10 min
Serves  3 - 4.


You need. 

20g fresh basil (2 handfulls)

1 handful walnuts 


50g grated cheese (e.g.parmesan)*


1/2 garlic clove 


60ml olive oil 


some salt and pepper 



Instructions. 

Put all ingredients, except the salt and pepper into a mixer and mix well until you get a coarse paste. If you like it creamy, just keep on mixing for a little while longer.

Once you've reached the desired consistency, try the paste and add a little salt and pepper to taste. 

Now savour the perfectly fresh taste of basil!


Note. 

* I only needed 40g grated cheese - probably depends on the cheese you choose or how you like it best.  

If you don't like walnuts as much as I do, you can replace them with any other kind of nuts. 

Enjoy immediately or put it in a glass with a lid to store in the fridge (for about 1 week) or freeze it if you don't plan to eat it in the next few days.
