Vietnamese Spring Rolls (with Quinoa)

In Vietnam you get the spring rolls fresh, not deep fried! With raw veggies, glass noodles and herbs - sometimes even with fresh fish - I LIKE !! 
Just a perfect appetizer on a hot day. Very quick and easy to prepare beforehand and take with you as a light office lunch. 
These particular spring rolls are made with quinoa and not rice noodles. It makes them more colourful, rich in nutrients and proteins!

Samosa Pie

This samosa pie is an adaption of the indian dumplings which are called "samosa". Samosa is a fried appetizer / snack you can buy at many street stalls around Asia.  But this pie version is healthier as it's not deep-fried. It has a spicy vegetable and meat filling but instead of frying the dumplings I just used  puff pastry to cover the filling. It's soooo deliciously easy!

MASALA CHAI

Spiced tea from Nepal, better known as chai (from India). "Masala" means spice mix in nepalese language and "chai" is tea.  It's perfect at any given time, but especially nice when you're a little cold and want to warm up and feel cozy. 
Your kitchen will smell delicious with all the spices! It takes approx. 10 min. to heat up this lovely homemade tea. Enjoy it as long as possible!

NAAN bread

Naan, a fresh indian bread. Here with sesame - but you can choose whatever toping you like: garlic, onion, cheese, other seeds etc. 
Naan ( = Bread) is a flatbread,  and on the contrary to the other indian breads, it is made with yoghurt. Traditionally you bake it in a clay oven, but luckily also bakeable  in a regular oven :)

The daily and often only meal for many nepalese people and during our trekking in the himalayas a very welcome and satisfying revival food after a loooooong day! 
I loved it and I'm so happy to have it back home. It always brings out great memories of this wonderful country, with its very kind people.
